More Requested Recipe's!

 Here is another list of requested Low Carb recipes!
Cloud Bread
  2 Eggs (Separated)
  1 tsp. Stevia Sweetener
  2oz. Cream Cheese (Softened)
  1/8 tsp. Cream Of Tartar
Mix egg yolk/sweetener/cream cheese until smooth.
Beat egg whites and tartar until it has stiff peeks. Carefully fold in your egg yolk mixture. Do not over fold. You want it to keep its stiffness, and not be runny. Spoon onto parchment paper and bake at 350 for 25-30 minutes, or until they start to brown. Hint- These are best if they have chilled for a couple hours. They are not as flaky and they hold up much better! These will keep in the fridge up to a week if they are in a air tight container!

Lemon Bars (Sorry for having a picture)
 Crust:
    1 1/2 cups Almonds (finely chopped/ground in a food possessor)
    1/4 cup Butter (Melted)
    3 Tbs. Stevia Sweetener
Combine all ingredients together. Press evenly into a 8x8 baking dish, bake on 325 for 10 minutes. Cool. Tip- This is a thin layer of crust. I like to double it!
  Filling:
    3oz. Box Lemon Jell-O (Sugar Free)
    2 Tbs. Lemon Juice
    8oz. Cream Cheese (Softened)
    1 cup Boiling Water
    Cool-Whip (Optional)
Whisk Jell-O in boiling water for 2 minutes. Add lemon juice and cream cheese. Beat until smooth. Chill for 1 hour. Stir. Then Spread onto cooled crust. Chill until set. Top with as much cool-whip as desired! (Be sure to keep count of added carbs!) Hint-These are great made with Strawberry Jell-O as well, just omit the lemon juice!

Cheese Stuffed Meat Loaf
  1/2 cup Bread Crumbs
  2lb. Ground Beef
  2 Eggs
  2 tsp. Garlic Powder
  1 sm. Onion (chopped)
  1/2 cup Green Pepper (chopped)
  2 Tbs. Worcestershire Sauce
  Cheese (your favorite)
  1/4 cup Ketchup
  Ketchup for the top
Tenderize Onions and green pepper. Add all the ingredients together (except the cheese), mix well. Split your mixture in half. #1: Layer first half of meat loaf in a baking pan. #2: Layer with Cheese. #3: Add second half of meat loaf on top of cheese. Seal the sides. Top with ketchup and bake on 350 for 1 hour, or until done.

Low-Carb Recipes!

I have been ask by several people to post some Low-Carb recipes that I serve here in the Wright's kitchen. I will start by adding the recipes of the two dishes from my last post.
 Broccoli/Cauliflower Salad
    1 Head Cauliflower (Cut up in small pieces)
    1 Bunch Broccoli (Cut up in small pieces)
    1/4 Cup Real Bacon Bits (I use Oscar Mayer)
    1 Cup Mayo
    1 Cup Shredded Cheddar Cheese
    2 Tbs. Original Unsweetened Almond Milk
    2 tsp. Stevia Sweetener
 Add together all ingredients in a large bowl. Stir, Chill and Enjoy!

Almond (Muffin Pan) Bread (Makes 6)
    3/4 Cup Almond Flour
    1 1/2 tsp. Baking Powder
    2 Large Eggs
    5 Tbs. Butter (Melted)
    2 tsp. Stevia Sweetener
  Mix all the ingredients together until smooth. Lightly spray your muffin pan. Pour mixture into pan making 6 Muffins. Bake on 350 for 15-17 minutes or until edges start to brown.
  Note- You can add 1/4 tsp. each of Garlic Powder and Onion Powder if you like garlic bread. This is very tasty with an Italian Dish!

 Fried Chicken
    4 Large Boneless/Skinless Chicken Breast (Cubed)
    1-2 Bags Pork Rinds (finely chopped)
    1/4 cup Parmesan Cheese (Grated)
    1 tsp. Chicken Seasoning
    Salt/Pepper
    Eggs (Beaten for dipping)
Combine pork rinds/seasoning/Cheese/salt and pepper in a bowl. Beat eggs in a separate bowl. #1: Roll chicken in the pork rind mixture. #2: Dip in egg. #3: Roll in Pork Rind mixture once again. Fry it up and enjoy!
Note- To make these buffalo style, heat up some Buffalo Wing Sauce in the microwave. Once your chicken has been fried, add the chicken to your sauce. Let it set 5-10 minutes to coat, remove from sauce and enjoy! When purchasing your sauce, be sure to get zero carb sauce! This is a NO CARB main dish and my kids love it!! You can cut your chicken in strips if you prefer, its a little less work!!!

Diet Update!

  Still on the Atkins Diet??....I must say, Yes We Are! If you come to our house searching for Potatoes/Rice/Bread/Sugar Filled Desserts and etc, you will quickly discover you have come searching in the wrong cupboard!
  We have added many different items to our daily menu since I first started this diet. Do I have cravings? Sure I do, Cake, I love sweets! But...after you have gone without it for 5 weeks, you will be happy with anything "sugar free/low carb" you get your hands on! LoL!
  Here are the two most favorite side dishes my little family and I have come to love in the last couple weeks!
We have always loved Broccoli/Cauliflower Salad! So, I turned it into low carb! To us, its taste the same, and we can basically have all we want at anytime! Stir up some chicken salad, put it on cloud bread, with broccoli/cauliflower salad on the side, and go to town with it! Yum! 

Almond Muffin Bread (made with almond flour), very low in carbs! Wait...Did I say Bread? I Did, and it is soooo amazing! I have made these several different ways, but our favorite is, Sweet! We eat these as a bacon/egg/cheese muffin for breakfast! Its a great filler to boost your day! 
I let my mom try one, and she ask me to make her a whole batch any way I would like! ha!
As for the kids? "Mom, what kind of diet food are we having tonight?"  LoL! It has become the norm to them for supper. Lunch and snacks on the other hand are low fat. It would be very hard to make a child do the Atkins like an adult. Or my children anyway!  
Ready for the total? 12 pound drop in 5 weeks. For some reason, I never drop weight very fast, but I do feel much better 12 pounds lighter! Jay on the other hand is still much Farther along than I. We won't even go there!
We hope to keep going until we meet our goals, then work on maintaining!!
