Our new way of eating!

 We (at the Wright Family house) have been eating lots of high carb...tasty desserts, breads, potatoes, lots of starchy foods, soda, sugary drinks and etc. NOT! Only wishful thinking around here!
 If you know Jay and I well enough when dieting, you should know, Heather does the Low-Fat Diet and Jay does the Low-Carb Diet! 3 weeks ago we start our diets!! While he continues doing very well as he always does, I get exhausted cooking two separate meals at supper time, and needless to say, I failed. Not at all happy with my self, I started thinking of ways to help my discouraged feelings. The only thing I could possibly do was to give up all my sweets and goodies, starchy foods and go down to getting 20 carbs a day along with Jay. My little mind just couldn't comprehend that! So I started finding substitutes for bread, rice, potatoes, desserts...Then I tried them before I was settled and for sure about the Atkins Low-Carb Diet. Here are a few dishes we have recently put on the table!
For a bread substitute I came a cross a recipe called "Cloud Bread", I tried a few different ingredients to make it my own and it soon became a Huge success! We have had Cheeseburgers, Chicken Salad, Tuna Salad and other Atkins friendly recipes on these! We use small chopped cauliflower for white rice and mashed cauliflower in the place of mashed potatoes. Don't knock it til you try it!
If you are a true Kentuckian, you love Fried Chicken! Breaded! By now you know those that are on the Atkins diet can't have breaded chicken. Last week I put together a mixture to roll the chicken in before frying it. Jay had "Boneless Buffalo Wings" (0 carb), while the kids and I dipped our "Crunchy Fried Chicken Nuggets" in ranch (0 carb)!!! It was very good and amazingly Wright kid friendly!
(Basically 0 carb) "Cheddar Broccoli w/Bacon Soup"! Yummy for these cold and snowy days that we have been having!
And have a "Peanut Butter Cookie" to take the sweet tooth away (2 carbs per cookie)!! I have also made low-carb Lemon Bars to munch on as well! 
I have tried many other recipes and have more on my list to try..and I'm very happy to say we are all adapting very well with the new way of eating! 
Jay has lost 31 pounds (in 3 weeks), while I have lost 6 pounds (today makes 1 week)! YAY!
