April's #2 Stroll!

Well, its me again (sooner than I thought) with a not so boring blog post!! I have been trying to think of a good recipe to post for one of those "spare of the moment" up-coming summer events...This recipe sounds difficult, but its really not. Very easy made and great to do ahead! One of the reasons I like this recipe, you can add or take a way to fit your family's dislikes/favorites. Make it your Own!!
  "Mexican Snack Squares"
      Ingredients:
2 Cans (8oz. each) Refrigerated Crescent Rolls
1 Can (16oz) Old El Paso Refried Beans   
1 Cup Sour Cream
2 Tbs Taco Seasoning Mix (I prefer Old El Paso)
1 1/2 Cups Shredded Cheddar Cheese
1/2 Cup Sliced Green Onions (8 Medium)
1/2 Cup Chopped Green Bell Pepper
1  Cup Chopped Tomato's Seeded
1/2 Cup Sliced Olives
     Directions:
#1 Preheat oven to 350.
#2 Unroll both cans of dough; separate dough into 4 long rectangles. Place crosswise in a ungreased pan (I just use a smaller cookie sheet). Press in bottom and 1 inch up sides to form crust. Firmly press to seal all connecting edges. 
#3  Bake 14-19 minutes or until golden brown. Let Cool Completely.
#4 Spread beans over crust. In a small bowl , mix sour cream and taco seasoning mix. Spread sour cream mixture over beans. Sprinkle remaining ingredients over sour cream mixture. Cover, and refrigerate at least one hour before serving. 
#5 Cut into small squares and serve with the rest of your Mexican meal!! Tip-this makes a great appetizer!


My hubby and kiddos don't care for vegetables that often and I simply cannot stand sour cream, but we all love this! They don't have a problem with the veggies and I don't even taste the sour cream!! You Gotta Try This!!

Update!

Hello to everyone!!
    Yes, it has been a while since my last post, I have had different ones remind me that I have not blogged in a while, although, I do have just a few things to fill you in on. I hope I don't bore you, but I wouldn't want to leave you in the dark!
    First of all, Mable died..that's right, our Dell Hardware's life ended with no warning:( It is very upsetting when things so simple in life takes place. I never realized how much Mable meant to us until she laid down, with no warning at that.! Jay (using my sweet mother's laptop) searched the web, from store to store to store, looking...He calls me into the room and says, I think I have made my mind up, I was so glad to hear those words, until I looked at the price...Dear Sweet Folks, I just about fainted! With lots of little prayers here and there to the Lord, he decides not to build his own, but to go to everyone's favorite store (Walmart) and buy one, I have to say, the price was much smaller than the first price I saw (still not as small as I wanted). Needless to say I now have a new Computer (haven't come up with a name just yet), empty and lots of room to file! I Hope to post some pictures soon!
    On a lighter note! As most of you all know, I chose to become a consultant with Thirty-One and make some extra money on the side..saying all that to say this, It has really taken off and here lately, I have been a "busy mo ma of just two", although, I have enjoyed every minute of it. #1 Jay has had to babysit!!!!!! I have yet to take either of them to a party...Believe me, I have my fingers crossed. ha! You that have children can relate to me on this, I would do anything in the world for my kids, but it feels good to get away every now and then!    
    Enough with my update!!....I will post soon with a new stroll down "Heather's Recipe Lane"!!!  I would love to hear from ya!

April!!!

Is it really April? It seems as though March was passed by without notice!! April does bring a new scroll down "Heather's Recipe Lane"!!! Are ya Ready? Lets go Scrolling!!

"Cheddar Ground Beef Casserole"
   Ingredients:
2lbs. Ground Beef or Ground Chuck
1 5oz. pkg. Egg Noodles
1 can Cream of Chicken Soup
1 pkg. Lipton onion Soup
1/2 Onion Chopped (optional)
Small can Mushroom Pieces (optional)
1 Small can Cheddar Cheese Soup
1/2 cup Water
   Directions:
Brown beef/chuck,onions and mushrooms.Drain. Cook noodles in salted water until (just) tender. Add noodles, cream of chicken soup and onion soup mix to beef/chuck. Pour into a casserole baking dish. Add water to cheddar cheese soup and blend until smooth. Pour over beef/chuck mixture and bake in a 375 degree oven until bubbly.
    I love this dish.....#1. It makes a lot for a family! #2. You will only have to put some Crescent Rolls with it for a complete supper!! #3. It is a very easy dish to make! #4. Best of all, its not to expensive!! #5. A No Fail Recipe! Sounds good just thinking about it!!!
