March Recipe #2

     Well, I have had several people tell me they are enjoying scrolling down "Heather's Recipe Lane"...so I thought I would make that scroll a little longer by adding one more recipe a month!
     Now that Winter is gone and the warm weather is hopefully here to stay until Fall, I have a very good, easy, pretty and refreshing dish for you guys to try and enjoy this Spring season. I have used this dish as a appetizer/snack/salad side or dessert. By far, this is one of my "many" favorite dishes!
    “Strawberry Jell-O Salad” (Large Batch)
Ingredient’s:
1-Large Cool-Whip
1-Large Cottage Cheese (Small Curd)
1-Large Can Crushed Pineapple
2-Large Boxes Strawberry Jell-O
        2-Cups Boiling Water
Directions:
Pour 2 cups boiling water over jell-o mix. Stir until dissolved (2min.). Drain all pineapple juice into a measuring cup, make up to 2 cups with cold water. Stir this into jell-o. Add cottage cheese and pineapples (stir). Fold in cool-whip (stir thoroughly). Place mixture in a large container. Chill over night. (Keep Refrigerated)

Note: This dish can be made (almost) Sugar Free. And you can also use Lemon/Lime/Orange or whatever flavor Jell-O you like instead of the Strawberry. For those of you that are dieting, it can also be made as a Low-Fat dish as well. Believe me, it is still good Low-Fat....Anything cold and refreshing taste good to your taste-buds when you've been on a diet STARVING for two months. ha-ha! Its worth it though!! (Side Note: I have said farewell to 22 pounds thus far!!!YAY!!)

  1. I think I will try the recipe! I love to cook and try new things but I have a limit on how many ingredients it consists of and also how many directions there are! LOL! I think this one meets my criteria!
